For this, Oliver chose Sauvignon Blanc clones that bring a particularly high amount of that green, peppery spice, and let them grow in cool sites. Light leaf removal keeps the grapes in the shade so that this aroma is preserved, which would fade in the bright sun.

Harvesting takes place as early as the beginning of September, when the flavors have developed and the natural alcohol remains low. After that, the grapes lie on the skins for a short time, ferment chilled in stainless steel tanks, and rest on the lees for several months. Only then is the alcohol removed in a particularly gentle way, so that the complex aromas remain almost completely intact. The wine magazine Vinum rated the Zero Hero with 85 points; the winery simply says: "A Sauvignon Blanc that shows its profile even without alcohol!"
