Sauvignon Blanc Sekt Brut by Oliver Zeter

Sauvignon Blanc Sekt Brut by Oliver Zeter is a sparkling wine from the Palatinate region made from pure Sauvignon Blanc, which develops its fine effervescence in the bottle. Since the 2013 vintage, the winery has been using it to demonstrate just how aromatic the grape variety can be as a sparkling wine.

Sauvignon Blanc Sekt Brut is a sparkling wine from Oliver Zeter in the Palatinate, whose base wine is fermented in stainless steel before undergoing a second fermentation in the bottle, followed by 18 months on the lees. With 11.5% vol, it has a lively feel.

Fine effervescence and juicy fruit

When poured into a glass, a fine effervescence rises in the Sauvignon Blanc Sekt, and the aroma reveals the clear, juicy fruit of the grape variety that has been preserved in stainless steel. Sauvignon Blanc is considered an exceptionally aromatic grape, and this Brut lets that character shine through in a charming way. At the same time, it retains the lively freshness expected from a dry sparkling wine.

On the tongue, it feels vibrant, the effervescence is elegantly integrated, and the fruit remains fine and present. On the finish, the wild, fruity nature of the grape variety combines with a captivating length. "Brut" denotes the dry taste profile of a sparkling wine, meaning the acidity sets the tone while the sweetness remains only in the background.

How wild Sauvignon Blanc becomes sparkling wine

The name "Sauvignon" comes from the French word "sauvage," which means wild. The winery also speaks of a wild grape variety that requires a great deal of experience. It is highly aromatic and ripens early, which is why the timing of the harvest determines whether its character is expressed in the sparkling wine.

Because Oliver Zeter has access to grapes from many different sites, each batch is harvested at its optimal stage of ripeness. The harvest is carried out quickly so that the berries have minimal contact with oxygen, and pressing is gentle. The winery then ferments the base wine in stainless steel tanks, which preserves the clear fruit aromas.

This is followed by the second fermentation in the bottle, the classic bottle fermentation process, during which the fine effervescence is formed and elegantly integrated into the wine. The sparkling wine then spends 18 months on the lees, a relatively short period that gives it finesse while maintaining its juicy, fresh profile. Our guide to sparkling wine explains exactly what happens during this process.

A glass for an aperitif and salmon tartare

This sparkling wine from Oliver Zeter is an uncomplicated companion for an aperitif, salmon tartare with cucumber and dill, or crispy vegetable tempura. The effervescence and acidity cleanse the palate after every fried bite, and the fruit picks up on the freshness of the cucumber and herbs. Whether for New Year's Eve, a birthday, or when friends drop by spontaneously, it ensures something festive is on the table in no time.

It bubbles most finely at 6 to 8 degrees, so the bottle should be in the refrigerator for a few hours before opening. Our guide How long does sparkling wine last explains how long you can store an unopened bottle and how long an opened bottle stays fresh.

The still side of the same grape variety is showcased in the dry Sauvignon Blanc 2025 from stainless steel. We have compiled further sparkling wines from our assortment, from Palatinate wineries and beyond, in the Sparkling Wine category.
