Aceto Balsamico di Modena from Fattoria Estense
Fattoria Estense is the balsamic brand of the family-run company Alico, located in the Modena area. The range extends from young and fluid to the 12-year-aged Tradizionale – graded by density, blended, and matured in the old vaults of Emilia-Romagna. Aceto Balsamico di Modena as it should be: honest, dark, and without caramel coloring in the higher grades.
Fattoria Estense stands for Aceto Balsamico di Modena from the home of balsamic vinegar, Emilia-Romagna. Behind the brand is the family business Alico, which set out in the late 1980s to combine the traditional art of Modenese vinegar production with modern, meticulous methods. The result is a full spectrum of aging: from the young everyday bottle through Bronze, Silver, and Gold, to the velvety Lodovico Campari and the crowned Tradizionale DOP.
From Modena, where balsamic is at home
Fattoria Estense comes from Emilia-Romagna, the only home of authentic Aceto Balsamico di Modena. Here, in the vaults near Cogneto, the vinegars mature in wooden barrels.
The brand is a tribute to the original family business upon which the Alico operation is built. In the late 1980s, the idea arose to combine ancient knowledge about balsamic—passed down through generations—with modern, flexible production. Tradition and the present go hand in hand here, and this is exactly where a good balsamic draws its character from.
Modena and neighboring Reggio Emilia are the world capitals of balsamic. No other place is permitted to bear the name. The soil, the climate, the grapes, and above all the patience of the people make the difference—here, they know that a good vinegar is not made in weeks, but in years. Thus, in this corner of Italy, balsamic is less of a product and more of a cultural treasure.
Some of the vinegar blends the Fattoria draws from are stored in old vaults for over 10 years before they move into a cuvée. Centuries-old vinegar cultures and well-kept family recipes form the basis for every single bottle—knowledge that cannot be bought, only passed on.
A maturation ladder from Bronze to Tradizionale
The assortment is built like a ladder, step by step denser and darker. The entry level is the young Aceto Balsamico di Modena IGP, fluid and fruity, the reliable vinegar for salads, sauces, and soups.
The colors are graded above that according to density: the fruity Bronze with a density of 1.19, the harmonious Silver with 1.25 as a versatile middle ground, and the full-bodied Gold with 1.34 as a Gran Riserva. At the top of the IGP range stands the velvety Lodovico Campari with a density of 1.38, an affordable approach to the great Tradizionale.
For those who prefer organic, there is the Villa Estense Bio with a density of 1.25—the same craftsmanship, just from organic farming. And enthroned at the very top is the Aceto Balsamico Tradizionale di Modena DOP, aged for at least 12 years, a small masterpiece from the acetaia.
This way, everyone finds their step: the young vinegar for every day, the colored labels for upscale everyday use, and the names—Lodovico Campari and Tradizionale—for special moments. You can start small and taste your way up, bottle by bottle, until you find your favorite level.
Without caramel coloring, made with time
The higher grades of Fattoria Estense are made without caramel coloring and artificial dyes—their dark color and sweetness come solely from boiled-down grape must.
What distinguishes the color grades is the density—and thus the concentration of the must: the higher the number, the thicker, darker, and more velvety the balsamic. The 1.19 of the Bronze becomes 1.38 in the Lodovico Campari. Only the young everyday vinegar contains a small amount of caramel coloring for its deep color, as is common in this price range—the aged levels do not need it.
The process for the IGP grades is always the same: grape must is boiled down and concentrated, combined with wine vinegar, and aged in wooden barrels. For the Tradizionale, even the wine vinegar is omitted—there, it is pure must that turns into balsamic on its own over the years. Fewer ingredients, more time.
With the Villa Estense, the grapes for the must are grown according to the rules of organic farming, checked and certified. That way, you get the familiar round taste, just organic—without compromising what is in the glass.
IGP and DOP, checked by the consortium
Fattoria Estense is a member of the Consorzio Tutela Aceto Balsamico di Modena, the consortium founded in 1993 to protect the origin. It ensures that authentic Aceto Balsamico di Modena comes from the region and is produced according to the rules.
The abbreviation IGP stands for the protected geographical indication, which the colored range bears. The Tradizionale plays in a league of its own: as a DOP, it is tested by the consortium after at least 12 years and only then released as affinato; the even older extravecchio is aged for at least 25 years.
The palette thus ranges from simple, young balsamic to the decades-aged Tradizionale—a breadth that few houses offer so completely. Everything is there, from the friendly price of the everyday bottle to the little luxury in a 100ml flacon.
For you, this means: every bottle of Fattoria Estense features a verified origin. Not just any dark vinegar from the shelf, but Aceto Balsamico di Modena with rules, control, and a name that means something. This is exactly what we value about this brand: reliable origin at a fair price, throughout the entire range.
Silver, Gold, and Tradizionale in the kitchen
If only one bottle is to be in the kitchen, we choose the Silver: harmonious, slightly thick, good for salads, fish, and cheese all at once. It is the golden middle of the range and rarely out of place.
For tomato-mozzarella or aged cheese, we reach for the thicker Gold, for a quick vinaigrette for the fruity Bronze. Those who shop intentionally organic will be well served by the Villa Estense Bio. And for a big Sunday dinner or as a gift, the Tradizionale is worth it, of which just a few drops over Parmigiano or strawberries say it all.
A flacon from this range is also a beautiful gift—dark, Italian, and always worth recommending. Once you have gotten used to good balsamic, you won't want to be without it in your kitchen cupboard.
