Acetaia Mussini Balsamico di Modena from Magreta
Acetaia Mussini is a family-run vinegar estate in Magreta near Modena, in the heart of Emilia Romagna. The family has been producing Aceto Balsamico di Modena since 1909; today, cousins Giorgio and Gabriele manage the house, which houses around 15,000 barrels. Classic aceto, fine condimenti, and a young vinegar bar all under one roof.
Acetaia Mussini stands for dense, carefully aged Aceto Balsamico di Modena from the heart of Emilia Romagna. In Magreta, a village near Modena nestled between the Secchia and Panaro rivers, the family cooks down their grape must and leaves it to age for years in wooden barrels. What the mothers of the family began in 1909 is carried on today by two cousins – with respect for tradition and a passion for experimentation.
The mothers began in 1909, the cousins in 2001
The roots of Acetaia Mussini reach back to 1909, when the women of the family left cooked grape must to age in small and large wooden barrels in their attic in Magreta.
It was Guido Mussini, born around 1885, who began producing balsamic early on; together with his wife Cesira Braglia, he founded the branch of the family from which the current owners descend. In the nineties, cousins Giorgio and Gabriele reunited, salvaged as many of the old barrels from Guido and Cesira's legacy as possible – and re-founded the Mussini company in the spring of 2001.
Previously, both had spent their professional lives in the world of ceramics. The passion for design remained, only the material changed: from clay to must, from glaze to barrel. They call their craft "L'Arte del Gusto" (the art of taste) – referring to the combination of ancient knowledge and new ideas.
In Modena, balsamic is considered black gold, and the art of its production was traditionally passed down through the family – among the Mussinis, for generations from mothers and grandmothers to their children. Giorgio and Gabriele continue this lineage today, with the same principles, but with the knowledge and technology of today.
From Aceto IGP to the Vinegar Bar
You will find the full range of the Acetaia Mussini assortment with us: classic Aceto Balsamico di Modena, fine condimenti, and the young, alcohol-free vinegar bar. The family produces the protected Aceto Balsamico di Modena IGP, along with condimenti and modern creations – from everyday dressings to festive drops.
The award-winning Il Denso is a dense Aceto Balsamico di Modena IGP containing a portion of vinegar aged for ten years; it is dark and almost as viscous as a Tradizionale. The syrup-thick Aldo Mussini 5 Medaillen comes in elegant packaging and is a gift for connoisseurs.
The three Emozione condimenti showcase three colors and three characters: the dark Emozione Classico for every day, the light Emozione Bianco for fish and poultry, and the pink-hued Emozione Rosé for salads and desserts. Those who prefer something festive should opt for the Condimento Balsamico Nobile, the elegant riserva in a gift box.
Brand new is the Vinegar Bar, a range of non-alcoholic shrubs for cocktails and mocktails: the Balsam Limoncino flavored with Amalfi lemon, plus Amaretto, Gin-Tonic, and Spritz. This is how Mussini translates the Italian aperitivo hour into an alcohol-free experience. Each of these creations is reminiscent of a classic bar drink, yet contains not a single drop of alcohol – the same signature, a new chapter.
Three secrets, passed down for generations
Good balsamic requires three things, the Mussinis say: ripe must from local grapes, careful reduction, and a lot of patience. They have been passing these three secrets down for generations.
The must comes from local grapes – Trebbiano, Lambrusco Grasparossa, and Ancellotta grown between the Secchia and Panaro rivers. It is slowly cooked down and then ages for at least three years in barrels made of fine wood, the so-called battery. Over the years, it moves through increasingly smaller barrels; as part of the liquid evaporates through the wood, the aceto becomes denser, darker, and deeper with every transfer.
Good to know: An Aceto Balsamico di Modena IGP like Il Denso is different from the rare, decades-aged Aceto Balsamico Tradizionale DOP. Both stem from the same tradition, but the IGP is more accessible for everyday use – and a good one, as with Mussini, can certainly be reminiscent of a Tradizionale.
Part of the art lies in the patient decanting process: over the years, the aceto is moved from barrel to barrel, always into a smaller container, always into a different type of fine wood that imparts its own distinct note. Nothing is rushed, nothing forced – time does the work. This is how simple grape must becomes an aceto over the years that is dense, dark, and complex.
15 employees look after around 15,000 barrels and bottle about 800,000 bottles a year. As a modern acetaia, Giorgio and Gabriele combine respect for tradition with a passion for experimentation – which is how the non-alcoholic vinegar bar emerged from old barrels and new thinking. After all, tradition cannot exist without innovation.
Second place in the Feinschmecker 2021
In 2021, the jury of the gourmet magazine *Der Feinschmecker* awarded Il Denso second place in their major balsamic competition.
“A top-class balsamic from the Mussini family in Magreta near Modena. Very nice, very fruity, very pleasant, top,” judged the testers, who had tasted fifty balsamic vinegars from Modena purchased in Italian supermarkets and delicatessens. Two Mussini vinegars landed in their Top 10. Their own seal of quality, “5 Medaglie” (five medals), stands for the highest standard of the house.
Mussini awards these five medals only to vinegars that meet their strict internal standard – a promise to everyone who picks up a bottle. For a small, family-run manufacturer from Magreta, such a place among the best balsamics from Modena is a fine testament. Chapeau.
Where best to start
If you are just discovering Acetaia Mussini, it is worth starting with the condimenti – they are mild, creamy, and the most versatile for everyday use.
For every day, we enjoy Emozione Bianco with fish and salad, and the dark Emozione Classico with grilled vegetables. If you want something festive, grab the award-winning Il Denso or the Condimento Balsamico Nobile in the gift box. And for a non-alcoholic summer evening, mix yourself a Spritz or a Limoncino lemonade from the Vinegar Bar.
As a small gift, the Aldo Mussini 5 Medaillen in its box is a great choice; for connoisseurs, the Nobile in the gift box is perfect. And for those seeking something truly special, drizzle the dense Il Denso over aged Parmesan – that is all a good evening needs.
By the way: You can find further Italian balsamic vinegars with us under Aceto Balsamico. Try them out – the two cousins from Magreta make it easy for you.
