Still Blanc de Noir La Taille by Oliver Zeter

Blanc de Noir La Taille by Oliver Zeter is a white wine made from the red grapes of Pinot Noir, Pinot Meunier, and Pinot Madeleine, extracted from the juice of the actual pressing. It has been awarded 89 points by Henris Weinguide.

Blanc de Noir La Taille 2025 is a still, dry wine made from red Burgundy grapes, which Oliver Zeter allows to ferment spontaneously in used barriques in the Palatinate region. Its color has a delicate apricot shimmer, and at 11.5% vol, it is lean and cool.

White peach, quince, and linden blossom

The Blanc de Noir smells of white peach, fresh quince, and greengage, with a bright, delicate hint of linden blossom in between. With some time in the glass, a vital minerality emerges, giving it freshness and drive. Henris Weinguide also noted bright blossoms, cornelian cherry, and white currant, calling it lean, stimulating, and lighthearted.

On the tongue, it is dry, taut, and precise, carried by a clear structure and a salty minerality. The finish remains long, cool, and calm, with fine tension until the last sip. The winery describes it stylistically as an almost still sparkling wine, and it does indeed possess that same freshness, only it sits quietly in the glass.

Gently pressed and spontaneously fermented in wood

As early as the beginning of September, the grapes are harvested by hand from old vineyards and gently pressed as whole bunches. This keeps the juice light, even though it comes from dark berries. At Oliver Zeter, the first juice that runs from the press by itself goes into the Zeró Grande Cuvée sparkling wine.

Only what flows subsequently under actual pressing pressure becomes the La Taille, as this portion is known in France. In the glass, this juice shows a vital minerality and a striking finish. The must ferments spontaneously in used barriques and matures there for another five months before being bottled.

Because the barrels are already used, the wood remains in the background, and the fruit takes the lead. Our guide to barriques explains how small oak barrels shape a wine.

Salmon sashimi, ginger, and pan-seared scallops

The same wine guide recommends salmon sashimi with ginger as an accompaniment, and the wine's salty minerality picks up the delicacy of the raw fish. Pan-seared scallops, veal tartare, or light poultry with lemon pair just as well, as its acidity highlights the delicate flavors on the plate. Even a light vegetable terrine with fresh herbs finds in it a quiet, reliable partner.

If you serve it as an aperitif, its freshness whets the appetite before the meal begins. Well-chilled, at eight to ten degrees, its tension unfolds most clearly. Thanks to the screw cap, the bottle can be easily closed after the aperitif and reopened later for the meal.

Made from Pinot Noir and Pinot Meunier but with a vibrant color, the Free Run Rosé 2025 comes from the same winery. If you wish to stick to light wines, you can discover dry companions from the Palatinate and other German regions in our white wine category.
