Truffle Praline Heart Box by Sawade in Pink and White
The Truffle Praline Heart Box by Sawade is a heart-shaped box with a pink lid, beneath which light and pink truffle hearts lie in a cream-colored bed. White chocolate covers both fillings, with vanilla in the light truffle heart and raspberry pulp in the pink one.
Truffle Praline Heart Box is a grand romantic gift from Sawade in Berlin-Reinickendorf: 188 grams housed in a cardboard box that is itself shaped like a heart. The pink lid bears nothing but the company's logo, and inside, every praline rests individually in its own molded recess.
Vanilla remains mellow, raspberry provides the accent
The light truffle hearts contain a creamy vanilla that starts broad and lingers long on the palate. Butter and sweetened condensed milk make this filling so soft that it yields at the slightest pressure.
The pink truffle hearts, by contrast, offer a brief, fruity punctuation mark, as the raspberry pulp provides an acidity that challenges the white chocolate. The difference between the two is exactly the kind of thing people enjoy debating as a couple, and one variety always ends up running out faster than the other.
Round, cool, fruity—the pralines are larger than they appear when the box is closed. Don't leave the box open, or you’ll find yourself reaching for a second one sooner than you’d like.
White chocolate contains neither cocoa mass nor its bitterness, relying solely on cocoa butter, milk, and sugar. This is why every nuance of the filling can be heard in this box, whereas dark couverture would have long since dominated the flavor profile.
Beetroot colors without influencing the taste
White chocolate cannot be dyed with just any shade of red, as many pigments either fade or impart their own flavor. Sawade uses a beetroot concentrate for this, which provides a vibrant color without being tasted in the finished piece.
An elderberry extract pulls the tone further into the cool spectrum and prevents it from shifting toward orange. However, beetroot is sensitive to heat and excessive stirring, which is why the color is added late and at a low temperature.
The truffle hearts themselves are cast in molds and removed once cooled, a process that requires more care for a heart shape than for a sphere. Afterward, someone on Wittestraße places each piece by hand into its recess, light next to pink, so that a pattern is revealed upon opening.
For two, in the evening, without haste
This box is meant for two people and for an evening when no one has to leave. Whoever presents it holds it with both hands, as it is difficult to pass around casually, and the lid says everything before a word is even spoken.
Neither of the two fillings contains alcohol. A dark cupboard kept at 15 to 18 degrees Celsius will keep the truffle hearts smooth and glossy; near a radiator, they lose their sharp edges, and in the refrigerator, they lose their aroma.
A dry sparkling wine stands up well to the sweetness, as does an espresso without sugar, both of which cleanse the palate of the butter. Sawade fills this mixture by hand, which is why no two pieces look exactly like their neighbor in the box.
The same truffles are available flat and without a box in the Truffle Praline Hearts, while the Ginster Praline Box offers a spring-like, also alcohol-free option. Suitable gifts for the second Sunday in May can be found under Mother's Day, and the Berlin collection is available at Sawade Berlin.
