Sawade Gold Nuts with Dark Nut Nougat in Dark Chocolate
Sawade Gold Nuts are nut-shaped pralines made of fine dark chocolate, filled with dark nougat from intensely roasted hazelnuts. Each one is individually wrapped in gold foil and features a knotted cord, allowing it to be hung directly on a tree branch.
Gold Nuts are filled nut pralines from Sawade in Berlin-Reinickendorf, each weighing 16 grams and encased in a shell of fine dark chocolate. We pack five of them into a cellophane bag tied with a cream-colored ribbon, ready to be hung on the tree without any additional packaging.
First the gold rustles, then comes the nut
The foil rustles between your fingers, and when you open it, there lies a nut that feels heavier than its size suggests. The dark shell breaks with a short, crisp snap, and behind it waits a nougat that melts on the tongue.
First comes the roasted note of the hazelnut, then the bitterness of the cocoa settles over it, and in the very end, the nut remains alone. Roasted, tart, calm – this is the taste of the house's dark nougat, which uses intensely roasted hazelnuts and little else.
There is no milk or cream in this filling, which is why the Gold Nut is vegan without needing any substitutes. It’s a generous size for one bite, just right for two, and the five pieces lie in the bag like a small treasure.
Rolled until perfectly smooth
For the filling, the hazelnuts are roasted, ground, and then passed through rollers until the mass feels completely smooth.
The finer the nougat, the longer the roasted note lingers in the mouth, and that is how you recognize a mass that has been given enough time. The hazelnut is high up in the list of ingredients, and this prominence is reflected in the taste.
Sawade roasts darker for this filling than for the house's milder varieties, which is why a dark shell is the perfect match. A milk chocolate would soften the character that defines this nut.
The cord is knotted by hand
The house spins the hollow bodies itself, rotating liquid chocolate in the nut mold until the wall is of uniform thickness. After cooling, it is filled, sealed, and individually wrapped, and the cord is also attached by hand.
For a 16-gram piece, that sounds like a lot of effort, and that is exactly what it is. There are five ingredients on the label, and none of them can hide behind the others.
In the cellophane bag, the cords tend to get tangled, which adds a few seconds to the unwrapping but has rarely bothered the recipient. Anyone who gives this bag as a gift saves themselves any explanation, because the shape reveals what is inside even before unwrapping.
The Sawade Gold Nut is right at home with a strong espresso and on a branch that otherwise doesn't have much shine. Stored cool, dark, and dry, the gold remains bright; if kept near a heater, the shell will turn gray, and in the refrigerator, it will attract moisture.
You can find the same dark nougat rolled into spheres in the Nut Nougat Chocolate Balls, and caramel-flavored and colorfully wrapped in the Pine Cones. More from Wittestraße can be found at Sawade Berlin, along with our entire Christmas selection.
