Organic Spring Blossom Honey from the Hersbrucker Alb – mild & floral

The organic spring blossom honey from Die Honigwanderer is collected at the end of April from the meadow orchards of the Hersbrucker Alb – from apple, pear, plum, and wildflowers. Creamed, mild, and finely fruity. In 2018, under founders Jonas and Daniel Scholz, the spring blossom honey received bronze at "Bavaria's Best Organic Products".

Organic Spring Blossom Honey is a mild, creamy blossom honey from meadow orchards, which an organic partner beekeeper of Die Honigwanderer collects as early as the end of April on the Hersbrucker Alb. The bee colonies are located at coordinates N49° 28' 6.575" E11° 28' 58.148", right in the middle of the Bavarian spring bloom. What arrives in the 250-gram jar is a light, gently fruity organic honey – single-origin, without additives, without flavorings, the quintessence of apple, pear, and plum blossoms in a creamy consistency.

Creamy, mild, with a fine fruit blossom note

In the jar, the spring blossom honey appears in a delicate golden yellow, finely creamed, with a mild fruit blossom aroma and light fruitiness unfolding on the tongue. Unlike dark forest honey, it does not taste tart, but light, mild, and sweet – a spring honey with character. You can recognize it by its bright light yellow color and fine spreadability.

The creaminess comes from the stirred honey: directly after extraction, the organic honey is stirred several times during the natural crystallization phase, often over several days. This keeps the consistency fine and spreadable, and the aromas fresh. A classic blossom honey for every morning, a versatile family honey with a balanced fructose-glucose ratio.

On bread and in yogurt

On a slice of fresh sourdough bread with butter, the spring blossom honey is right at home – you don't need anything more. In plain yogurt with fresh berries, it adds a gentle sweetness without masking the fruit acidity. It also goes perfectly with a bowl of crunchy muesli.

For children at breakfast, in tea with lemon, or as a baking ingredient in honey cake, this mild organic honey is an all-rounder. A teaspoon in a salad dressing with apple cider vinegar and mustard brings the freshness of the meadow orchards into the jar – this is most apparent with a green salad with goat cheese. If you enjoy the creaminess, it is also worth taking a look at our organic honey assortment.

Bronze 2018 at Bavaria's Best Organic Products

In 2018, the spring blossom honey from the brand Die Honigwanderer received bronze at the “Bavaria’s Best Organic Products” competition organized by LVÖ Bayern – at the time under founders Jonas and Daniel Scholz, who handed the company over to Stefanie and Simon Weber in 2024. The jury evaluated taste, packaging, as well as ecological and social commitment. Requirement: two-thirds Bavarian organic raw materials, production in Bavaria. Documented by the LVÖ Bayern press release.

Today, Stefanie and Simon Weber continue to lead the Die Honigwanderer brand and curate a network of around 70 bee colonies from organic partner beekeepers throughout Germany. The spring blossom honey still comes from the Hersbrucker Alb; the varietal philosophy and nectar selection remain the same, as Simon describes the concept in our assortment discussion. Extraction is gentle, not heated, and bottled without further ingredients. The entire assortment from Die Honigwanderer follows this nectar philosophy – six varietal honeys, each representing its region.

Creamy honey becomes firmer over time

It should be kept cool and dark, at 10 to 18 degrees. Creamed honey can become firmer over time – this is a sign of its natural composition, not a defect. It can be stirred soft again in a water bath at no more than 40 degrees without losing any enzymes. Fresh honey on warm toast: the classic that never gets old, and you start your day with sunshine in a jar.
