Taralli Caserecci, crunchy snacks from Puglia

Taralli Caserecci are homemade snacks from Puglia, baked with wheat flour, white wine, salt, and olive oil from the Schiralli family. First boiled, then baked – this is what makes these little rings so crunchy. Not an industrial cracker, but authentic Taralli Pugliesi.

Taralli Caserecci are classic Taralli Pugliesi, a traditional snack from Puglia. These crispy dough rings are made from just four ingredients: whole wheat flour, extra virgin olive oil from the Schiralli oil mill, white wine, and salt. Following an old recipe, they are first boiled in salted water and then baked until golden brown, without any frills.

Crunchy, savory, with a splash of white wine

With the first bite, the taralli have a fine, dry crunch, followed by a slightly nutty tone from the whole wheat and the savory depth of the white wine in the dough.

They are hearty and salty, not sweet, and each ring makes you want another. The olive oil keeps the dough crumbly, while the white wine provides the typical, slightly tart note that distinguishes good Taralli Pugliesi. Small, crunchy, and honestly seasoned—a pastry like this needs nothing more.

Unlike many supermarket crackers, they taste like real dough and good oil instead of additives. Once you've nibbled on fresh taralli from Puglia, you'll recognize the difference from the scent as soon as the bag is opened.

First boiled, then baked

The trick lies in the process: before the taralli head into the oven, they take a quick bath in boiling salted water.

Just like gnocchi, the rings rise to the top as soon as they are ready, and only then are they baked. This boiling is exactly what makes the surface smooth and the texture extra crunchy. Each ring is shaped by hand, just as the nonnas in Puglia have done for generations – a little irregular, and that is precisely what makes them beautiful.

Taralli belong to Puglia like olive trees. They used to be the durable staple for farmers, baked from a little flour and leftover wine, which kept for weeks. Today, they are nibbled on all year round, but the way they are made has remained the same.

For aperitivo, wine, and cheese

Taralli are the classic snack for an aperitivo, served in Puglia with a glass of wine.

Cheese, salami, ham, or an antipasti platter are their classic companions, along with a glass of wine or a cold beer. Those who don't like alcohol enjoy them just as much with juice or lemonade. Once placed on the table, the little rings are usually gone faster than expected.

They also travel well: in a backpack on a hike, in the glove compartment on a long drive, or as a small gift when visiting friends. Children like the mild rings plain, or broken over a salad, they make a perfect substitute for croutons.

From the Schiralli family oil mill

The taralli come from Olearia Schiralli in Bitetto near Bari, where Antonio Schiralli and his brothers press their olive oil on about 20 hectares with roughly 8,000 trees, just 12 kilometers from the sea. The same extra virgin olive oil is used in the dough of these rings.

This brings everything full circle: the oil for which the family was awarded the Feinschmecker Olio Award here refines a pastry from the same hands. The taralli come to you in a 200g bag. You can find the entire Olearia Schiralli range and other savory snacks with us, along with a bottle of their Crudo extra virgin olive oil. Puglia on your plate, with no great effort at all.

Olio Crudo
