Questions about Olive Oil Sei Cinque Zero – 250ml?

We are happy to help you with Olearia Schiralli Olio Crudo.

Sei Cinque Zero from Puglia, robust Coratina olive oil

Sei Cinque Zero is an extra virgin olive oil from Puglia, made exclusively from the Coratina variety. Robust, green, and spicy. There are six hundred and fifty olives packed into every small bottle, and it was named the test winner by Stiftung Warentest in 2022.

Crudo Sei Cinque Zero is the single-varietal Coratina oil from Olearia Schiralli in Puglia, named after the 650 olives found in a quarter-liter – "sei cinque zero" is Italian for six, five, zero. As a robust, medium-fruity extra virgin olive oil, it offers notes of almond, green apple, and artichoke. In 2022, it was named the test winner by Stiftung Warentest.

Green almond, artichoke, and a late kick of spice

On a spoon or drizzled over a plate of pasta, this Coratina shows what it can do: green almond, accompanied by green apple, artichoke, and a hint of green banana, all carried by a tart, grassy core and a trace of green walnut.

Almond of the finest quality, noted the Feinschmecker jury – and that is exactly what defines this oil. The spice comes late, but is distinct, with a peppery tickle in the throat that characterizes robust Coratina oils. Fruity, bitter, and spicy elements make a confident appearance here; it is an oil with backbone that holds its own against hearty food rather than being overshadowed.

For robust dishes that can handle a challenge

A strong oil like this needs dishes that can keep up – added raw at the end to ensure its green, spicy character is preserved. It is too individualistic for heating; its strength belongs on the finished plate.

Grilled vegetables, a hearty bean soup like Ribollita, pasta with garlic, mature Pecorino, or a steak fresh off the grill are its ideal companions. Over mild food, the Coratina would take charge, but alongside hearty ingredients, it fully exerts its power. A drizzle over a finished soup is all it takes to give the dish direction.

The Ogliarola-based Crudo oil is significantly milder and gentler – both oils share the same origin, but not the same character.

The Schiralli brothers and their 650 olives

At the foot of the Murgia, on about 20 hectares of red soil near Bitetto, not far from Bari, Antonio Schiralli and his brothers tend to their olive groves. Plenty of sun, a constant sea breeze, and the semi-rocky terrain give the robust Coratina its character. The variety is considered one of the richest in Puglia, full of the green, bitter tones that distinguish a young oil.

For the Sei Cinque Zero, the Coratina olives are harvested and cold-pressed just a few hours later. The name quantifies how dense this oil is: the family puts 650 olives into a single quarter-liter bottle. Under the brand name Crudo, Italian for "raw," the focus is on gentle processing, without heat, without shortcuts.

The awards speak for themselves: in 2022, Sei Cinque Zero was the test winner in Stiftung Warentest's olive oil test; a year earlier, it took 1st place in the medium-fruity category at the Feinschmecker Olio Awards, and a silver medal in 2017. You can find more oils in the Olearia Schiralli assortment and in our selection of olive oil from Italy. A small bottle with a big impact.

Kept cool and dark, its strength remains

Even a robust oil loses its green freshness over time. Stored in a dark, cool place and sealed tight, away from the stove and windowsill, Sei Cinque Zero retains its piquancy the longest.

Once opened, it should be used promptly at the table rather than stored in the pantry. This keeps the late spice that the Coratina is known for alive. Unopened and stored in a cool place, it will last until the following autumn.
