Organic Blossom Honey from Dandelion and Fruit Blossoms, golden yellow and fruity from the Mürztal valley

The organic blossom honey from BIO Imkerei Neber comes from the Mürztal valley in Styria – made from dandelion and fruit blossoms like apple and cherry. Golden yellow, creamy, and intensely fruity, it is not too sweet despite its light color. A single-varietal organic honey from Austria, with no additives and no flavorings.

Organic Blossom Honey Dandelion and Fruit Blossom is a golden-yellow, creamy spring blossom honey harvested by BIO Imkerei Neber in April and May in the Mürztal valley in Styria. Anton Neber, a master beekeeper since 2002, lets his Carnica bee colonies forage in the traditional meadow orchards and meadows of his home region, where dandelions and fruit blossoms like apple and cherry bloom at the same time. What you get in the 250-gram jar is organic honey from Austria – single-varietal, natural, and without any other ingredients.

Golden yellow, creamy, intensely fruity

In the jar, the blossom honey glows a bright golden yellow; spread on bread, it unfolds a creamy sweetness with intense fruitiness – the fruit blossoms provide the apple and cherry notes, while the dandelion adds a robust, floral depth. Despite its light color, it doesn't taste overly sweet, but rather pleasantly balanced.

Dandelion honey is not easy to harvest: it requires warm, humid weather for the dandelion to actually "yield honey" – as beekeepers call it when the blossoms produce abundant nectar. Anton Neber combines the dandelion nectar with the simultaneously blooming apple and cherry trees of his home region. This honey, highly sought after by honey lovers, crystallizes relatively quickly – a sign of authenticity in good honey, not a defect.

Blossom honey – fruity on bread and in yogurt

This blossom honey is right at home on a warm breakfast roll with butter – the apple and cherry notes give the morning a delicate sweetness. It unfolds its fruity depth beautifully in yogurt with fresh berries or in muesli, and a scant teaspoon is enough.

As a baking ingredient in honey cake, in tea with lemon, or as a sweetener in salad dressing with apple cider vinegar and mustard, the fruity spring note enhances the dish. For your cup of breakfast tea or coffee, a teaspoon dissolved in water below 40 degrees Celsius is enough to preserve the delicate aromas.

Three generations of beekeeping from Upper Styria

Behind BIO Imkerei Neber are Anton and Gerlinde Neber, a third-generation family beekeeping business from Sankt Lorenzen in the Mürztal valley in Upper Styria. Anton passed his master beekeeper exam at the Styrian Beekeeping School in 2002 and has worked ever since with the native Carnica bee, a bee breed that has been adapted to the Alpine region for centuries. Gerlinde manages the business and handles sales in the Honig-GENUSS-keller.

The dandelion and fruit blossom nectar is a local harvest – the bee colonies don't have to travel; they find the right nectar supply right on their doorstep in the Mürztal, as Anton describes the harvest calendar during a discussion of their range. Since 2007, the honey has been extracted gently in the in-house Honig-GENUSS-keller, never heated, and bottled by hand in small batches. You can find more single-varietal organic honeys from Austria in the BIO Imkerei Neber range.

Crystals are a sign of untreated honey

Store the organic blossom honey in a dark, cool place at 10 to 18 degrees Celsius. Blossom honey crystallizes relatively quickly – this is a quality feature of untreated honey. Warm it in a water bath at a maximum of 40 degrees for five to ten minutes if the consistency becomes too firm – this preserves the enzymes. Never heat it in the microwave, as the delicate aromas will be lost.
