Vinschgau Sweet-and-Sour Zucchini, crisp-pickled

Lechner's Vinschgau sweet-and-sour zucchini are crisp zucchini slices from South Tyrol, pickled in wine vinegar with mustard seeds and a sweet-and-sour note. Not soft vegetables from a jar, but a firm-to-the-bite aperitivo with character.

The Vinschgau sweet-and-sour zucchini are a pickled antipasto specialty from the Lechner family in Laas: zucchini slices from the Vinschgau valley, pickled in wine vinegar, salt, sugar, and mustard seeds. They are reminiscent of classic gherkins, but with a more refined, sweet-and-sour profile. This results in a purely plant-based antipasto in a 300g jar, just as it is served for aperitivo in South Tyrol.

Crisp, sweet-and-sour, and savory

The zucchini taste crisp, savory, and juicy, balanced with the mild acidity of wine vinegar and small mustard seeds as flavorful accents.

Unlike gherkins, these zucchini slices remain pleasantly tender yet firm to the bite; nothing gets mushy. Sugar and wine vinegar are perfectly balanced, complemented by the subtle heat of the mustard seeds. The result is a fresh, sweet-and-sour snack that awakens the palate without overwhelming it. An antipasto for those who like it clear and crisp.

In the jar, the light green slices lie in a clear brine, interspersed with yellow mustard seeds. They taste as fresh as they look. A little greeting from the South, made in the Alps.

As an aperitivo, with cheese, and on bread

The Vinschgau sweet-and-sour zucchini come pre-pickled and ready to eat – simply take them cold out of the jar, no cooking required.

They are the classic aperitivo snack, perfect for an antipasti platter alongside a glass of white wine or Prosecco. They showcase their freshness on rye bread with quark and dill, paired with feta cubes, or alongside a hearty snack platter with cheese and speck.

Finely chopped, they also spice up potato salad, remoulade, or sandwiches, and on a cheese board, they provide a fresh counterpoint to the richness. A 300g jar is enough for 4 to 6 small portions.

If you like mixed vegetables, reach for the Vinschgau Farm Vegetables in Tomato Sauce. And for those looking for classic cabbage, you will find the Vinschgau Farm Sauerkraut nearby. Once opened, the zucchini will keep in the refrigerator for about 2 weeks.

The Lechner family from the Vinschgau valley

The pickled zucchini come from the Lechner family house in Laas, the only major cabbage producer in South Tyrol that has been cultivating the art of preserving for generations.

For more than 70 years and over three generations, the Lechners have been processing vegetables from the Vinschgau valley. Herbert and Evelyn Lechner run the business today with their sons Kevin and Dennis. The zucchini grow on the fertile soils between Laas and Prad, where the strong temperature difference between day and night gives them their firmness and aroma.

Within 24 hours of harvest, the zucchini are washed, sliced into 5 mm thick rounds, and placed into the sweet-and-sour brine. They marinate there for a few days, usually 2 to 3 days, until they develop their full flavor. This preserves the freshness of summer, completely without artificial additives.

What used to fill every pantry is still being maintained here by the family on a small scale today. Discover our other Lechner specialties. Simply delicious.
