Les Royans sardines by la belle-iloise in ravigote sauce

Les Royans sardines by la belle-iloise are whole sardines in extra virgin olive oil, accompanied by a ravigote sauce made with carrots, lemon, and gherkins. Of all the company's recipes, this one features the highest proportion of fish.

Les Royans sardines are a canned fish product with cold ravigote sauce from la belle-iloise in Quiberon, Brittany. The 115-gram tin contains whole sardines in extra virgin olive oil, along with a ravigote sauce featuring carrot, lemon, gherkin, and mustard.

Acidity, mustard, and a touch of vegetables

The ravigote tastes acidic first and then savory, and it is in exactly this order that it meets the fish. Vinegar and lemon lead the way, while the mustard follows a moment later and lingers on the palate.

The carrot brings a subtle sweetness, the gherkin a herbaceous, salty note, and together they create a seasoning that truly cuts through the fatty fish. It never overpowers the fish, but instead refreshes the palate between bites.

Underneath lies the extra virgin olive oil, which is used more generously here than in most of the house's other recipes. It mellows the acidity and provides the tin with a soft, fruity base upon which everything else can rest.

Cold from the tin, with jacket potatoes, in a salad

This sardine is meant to be eaten cold, as heating it causes the sauce to lose the very freshness it was designed for. Straight from the tin onto a piece of baguette is how it is best enjoyed.

Served with warm jacket potatoes and butter, it creates a contrast of hot and cold, acidic and mild that can anchor an entire meal. In a salad with lettuce and hard-boiled egg, the sauce serves as a complete replacement for dressing.

Open the tin half an hour before eating; the cold olive oil will lose its cloudiness and the herbs will become more prominent. The milder alternative without mustard is the Saint Georges sardine.

Ravigote means to revive

The name comes from the French verb "ravigoter," which means to wake up or get someone back on their feet. That is exactly what this sauce still does on the plate today.

In classic French cuisine, ravigote is a cold sauce made from vinegar, oil, mustard, and finely chopped herbs, served with calf's head, poultry, and fish. It is never cooked, because heat flattens its acidity and makes the herbs lose their color.

In the tin, it therefore remains raw and only meets the fish when both are sealed together. The fish content is higher in this recipe than in any other in the range, which is why the sauce remains more of a seasoning than a side dish.

The tin for an outdoor table

Cold, acidic, and savory as it is, this sardine belongs on a table in the shade, with bread, butter, and a glass of white wine on the side. It is the tin you pack when you don't feel like cooking anymore that day. More sardines can be found alongside it, and everything from Brittany can be found in our la belle-iloise selection.
