Questions about Sicilian Cannoli - Pistachio?

We are happy to help you with Greenomic Delikatessen.

Cannoli di Sicilia Pistacchio by Greenomic Delikatessen

Cannoli di Sicilia Pistacchio by Greenomic Delikatessen are crispy pastry rolls with a pistachio paste filling. They come in a green metal tin with a swing-top closure, which keeps the pastries dry and crunchy until the very last one is gone.

Cannoli di Sicilia Pistacchio are Sicilian rolls made from thinly stretched dough that Greenomic Delikatessen has crafted in Italy. The 200-gram tin contains the rolls pre-filled; their shell tastes of wheat, cocoa, and vanilla, while the cream features notes of pistachio and milk.

The crunch of the shell, the soft cream within

The shell breaks with an audible crunch, releasing cocoa and vanilla before the soft cream inside takes over. Its pale green hue comes from the pistachio paste itself, and the scattered pieces of pistachio add a second, crunchy element.

The wine in the dough is more than just a side note, as it makes the dough supple and helps it puff up during baking. This creates the coarse, blistered surface that distinguishes a carefully crafted cannolo from smooth, factory-made pastries.

Whole milk and skimmed milk powder round off the cream, adding a milky tone beneath the nuttiness, reminiscent of Sicilian pistachio gelato. This pastry is undeniably sweet, which is why it pairs well with a strong counterpart on the saucer.

From reeds to the name of the pastry

The name comes from canna, the reed that grows along Sicilian streams. The thinly stretched dough was wrapped around short sections of reed, baked, and the reed was removed after cooling, leaving a tube for the cream.

Later, metal molds replaced the reeds, but the shape itself has remained unchanged to this day. In a Sicilian pasticceria, the filling is usually added just before sale so that the shell retains its bite, and it is precisely this function that the sealed tin performs here.

In Sicily, the pastry originally belonged to the carnival season and appeared in pastry shop windows for only a few weeks of the year. Today, it is available there all year round in every bar and at every cake counter, usually significantly larger than this handy format.

With espresso, sorbet, or over yogurt

Pistachio and coffee are a well-matched pair in Sicily, and Greenomic Delikatessen brings both together in this roll. A strong espresso balances the sweetness of the cream with its bitterness; two pieces on the plate are enough for a long afternoon.

On a dessert plate, the pastry sits beautifully beside a scoop of lemon sorbet, whose acidity provides a better contrast than another sweet dish would. Coarsely crumbled, they make a crunchy topping for panna cotta, yogurt, or fresh berries.

The green tin stays in the kitchen

Greenomic Delikatessen’s green tin comes already wrapped for gifting and needs neither paper nor ribbon. After the last roll is gone, it can remain in the kitchen to hold cookies, tea, or small items, making the purchase worthwhile twice over.

Close the clasp tightly after every reach inside, otherwise the pastry will absorb moisture and lose its crunch. Stored in a cool, dry place, it will remain just as it arrived from Italy until the printed date.

The brand's second variety awaits in the pink tin as Cannoli Nocciola, and the rest of the sweets from Greenomic Delikatessen can be found in the Dolci selection. You can find more sweet pastries right next to it.
