Questions about Wild Berry – finely sieved?

Fine-strained forest fruit by Alpe Pragas, velvety and dark

Fine-strained forest fruit by Alpe Pragas is a berry spread made from raspberries, blackberries, strawberries, and red currants, which is pressed through a fine sieve after cooking. What remains is a smooth, dark fruit pulp that spreads on a croissant just like a cream.

Fine-strained forest fruit, labeled Boscus, is the seedless berry spread from Alpe Pragas in the Prags Valley in South Tyrol. Four varieties combine to create a 76 percent fruit content, thickened solely with apple pectin and seasoned with lemon juice, packaged in a 335-gram jar.

Velvety and dark on a croissant

Upon opening, it glows deep violet in the jar, and it smells like a berry patch on a hot afternoon.

On bread, the four varieties interact: the strawberry is sweet, the blackberry tart, the red currant sharp, and the raspberry fragrant—none dominates the others. The mass is smooth and soft, forming a short thread on the spoon and spreading effortlessly.

Because the solid components remain in the sieve during the straining process, Boscus turns out somewhat softer than a chunky preserve. That is exactly where its appeal lies, as the spread becomes a cream rather than a marmalade with resistance.

What straining through a sieve achieves

Fine-strained means that the cooked berries are finally pressed through a fine mesh.

Seeds, stem remnants, and skins stay in the sieve; only the pure pulp passes through, which is why a larger amount of fruit results in a smaller amount of finished spread. Alpe Pragas accepts this loss because it defines the texture.

This is particularly worthwhile for blackberries and red currants, which naturally contain many hard seeds. Their aroma remains without the resistance, which also makes this variety suitable for children and for filling pastries.

This sits exactly in the middle between jam and jelly. Jelly uses only pure juice and omits the fruit pulp, while jam includes both along with the seeds. The strained spread retains the pulp and removes only the hard parts.

Raspberry, blackberry, and the acidity of red currant

The four varieties are chosen so that each covers a different corner of the flavor profile.

The strawberry provides sweetness and fragrance, the raspberry its perfume, and the blackberry a tart, almost woody depth. The red currant provides the acidity that holds the whole together and prevents the spread from feeling heavy and cloying.

Sugar is added only as much as necessary for gelling, and lemon juice further lifts the acidity. Alpe Pragas deliberately avoids artificial flavors and dyes; the color comes from the berries themselves.

For quark, sponge cake, and a long Sunday

The smooth texture is best showcased on a freshly baked croissant, accompanied by a coffee and some time.

Stirred into quark or natural yogurt, Boscus tints the entire bowl; in a Swiss roll, it provides a seedless filling, and it lies like a dark ribbon over vanilla ice cream. The tart berry also holds its own well against aged mountain cheese.

Keep the opened jar in the refrigerator and remove the spread with a clean spoon, and it will stay fresh for weeks. The entire seedless line can be found under Fine-strained, and the chunky varieties under the fruit spreads from Alpe Pragas.

Alpe Pragas

Fruchtig, alpin, ehrlich – so kommt Südtirol ins Glas.
