Creamy, slightly malty, with hints of blackberry and raspberry. A single-origin organic multifloral honey, with no additives and no flavorings.

Organic Summer Honey from Die Honigwanderer is a creamy multifloral honey harvested by an organic partner apiary during June and July in the expansive meadows and ridges of the Welzheim Forest. The bee colonies are located at coordinates N49° 28' 6.575" E11° 28' 58.148" – in the midst of a foraging area full of summer bloomers like clover, yarrow, and meadow sage, at an altitude of around 500 meters. What arrives in the 250-gram jar is a malty, berry-fruity organic honey with a creamy consistency, single-origin and additive-free.

Creamy, malty, berry-like

In the jar, the summer honey displays a warm golden hue; spread on bread, it delivers a creamy sweetness with subtle notes of blackberry and raspberry and a slightly malty finish. More robust than a mild spring blossom honey, but nowhere near as tart as a forest honey – an organic honey somewhere in between, with a character all its own. You can recognize it by the warm gold tone in the jar.

Summer bloomers such as clover, chamomile, and meadow sage give the honey its fruity depth, complemented by the aromas of wild meadow herbs. Creamed immediately after extraction, the consistency remains spreadable for many months. This is what multifloral honey in a jar is all about – not just one flavor, but a concert of 8 to 12 primary bloomers, depending on the season.

A delight with quark and in muesli

On a cream cheese spread or in a quark dish with berries, this organic summer honey brings out its fruity side particularly well. It is also wonderful drizzled over grilled peaches with vanilla ice cream – a summer dessert in two steps. On the weekend, it stands ready next to the pancakes – a scant teaspoon per stack is enough for the whole family.

On a slice of good sourdough bread with butter, it is a classic. In a bowl of crunchy muesli with yogurt and fresh berries, it provides the perfect sweetness without overpowering the fruit. If having it in evening tea with a little lemon, one teaspoon is enough; it is best dissolved in water no hotter than 40 degrees – otherwise, the delicate aromas will be lost.

70 bee colonies foraging on the plateau

In June and July, the partner apiary moves its bee colonies into the Welzheim Forest, at an altitude between 400 and 600 meters. Here, clover, yarrow, chicory, and wild herbs bloom in a variety that the summer honey carries directly into the jar. Unlike single-varietal honeys like acacia or linden, the bees here collect nectar from several plants – which is why it is called multifloral honey, as Simon explains the difference during our assortment discussion.

Behind the brand Die Honigwanderer are Stefanie and Simon Weber, who have been curating a network of around 70 bee colonies from organic partner apiaries across Germany since 2024. Each partner beekeeper works according to strict EU organic guidelines; the honey is extracted gently at around 35 degrees, not heated, and bottled without any additional ingredients. The other organic honeys from Die Honigwanderer range from light acacia honey to dark forest honey – six varietal honeys, each with its own foraging area.

Try two varieties side-by-side

It belongs on a dark, cool shelf at 10 to 18 degrees. If the consistency becomes firmer, warm it in a water bath at no more than 40 degrees for five to ten minutes – this preserves the enzymes. Trying two varieties of organic honey side-by-side on a cheese board is the most impressive way to see just how different honey can taste. When placed next to the spring blossom honey, the summer honey’s unique flavor profile truly comes to light.

Organic control body DE-ÖKO-037 German Agriculture
