The majority of the base wine is matured in stainless steel tanks, though 5% is fermented in oak barrels. To add complexity to the Champagne, 10% of this cuvée consists of reserve wines from older vintages—a special technique with a significant tradition in Champagne. A portion of the cuvée has undergone malolactic fermentation, which provides a unique mouthfeel and further layers of complexity. Naturally, this high-quality Champagne undergoes its second fermentation using traditional bottle fermentation: the méthode champenoise. The Autolyse Champagne is aged in the bottle for a full 11 years before being disgorged by hand.

Thanks to high-quality base wines from 2008 and 2009 and long aging on the lees, this creamy Champagne entices with a chalky minerality and a particularly fine, subtle perlage. It tastes smooth and elegant yet full-bodied, reminiscent of apple tart with caramelized almonds, accompanied by raspberries with pistachios and white pepper, with a subtle herbal quality. A magnificent, aged Champagne that serves wonderfully as an accompaniment to food.

Autolysis in Champagne – when yeast decomposes

When yeast gradually dies in the bottle at the end of fermentation and during aging on the lees, the phenomenon of autolysis occurs. This is the process of a microorganism interacting with the wine, providing strength and complexity. Autolysis thus refers to the decomposition of yeast in the bottle following the second fermentation. This process creates aromas reminiscent of flowers, yeast, and toasted notes. With longer aging, notes develop that recall leather, tobacco, coffee, mocha, or candied fruit.

Autolyse is an aged Champagne from selected parcels that has matured on the lees in the cellar for ten years, celebrating time and its mark upon the wine. All of this yields a Champagne that reveals its origins and the long years spent on the lees in the glass. Only about 8,000 bottles of the Autolyse Blanc de Blancs from the Le Brun de Neuville Champagne house are produced.

Le Brun de Neuville – Autolyse Blanc de Blancs

Côte de Sézanne

100% Chardonnay

45-year-old vines

132 months of bottle aging

Dosage 8g/l

Brut

12% vol. alcohol

//cdn.shopify.com/s/files/1/0905/1124/5646/files/champagner-autolyse-brun-de-neuville.jpg?v=1751010281
